Apple Bran Muffins for Two

Prep: 25 min. Bake: 20 min. + cooling
Ingredients
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon baking soda
1/8 teaspoon ground nutmeg
1/3 cup 2% milk
1 egg
2 tablespoons packed brown sugar
2 tablespoons canola oil
1 teaspoon vanilla extract
1/2 cup All-Bran
2/3 cup shredded peeled tart apple
1/3 cup chopped walnuts
1/3 cup raisins
Directions
In a large bowl, combine the first six ingredients. In another bowl,
combine the milk, egg, brown sugar, oil and vanilla. Stir into dry
ingredients just until moistened. Fold in remaining ingredients.
Fill greased or paper-lined muffin cups three-fourths full. Bake at
350° for 18-22 minutes or until a toothpick inserted in muffin
comes out clean. Cool for 5 minutes before removing from pans to
wire racks. Yield: 6 muffins.
