Antipasto Salsa Recipe

Ingredients

  • 1 cup diced fresh tomatoes
  • 1 cup chopped zucchini
  • 1/2 cup canned artichokes hearts, drained, chopped
  • 1/2 cup fresh basil
  • 1/3 cup roasted red peppers with brine, diced
  • 1/4 cup minced onion
  • 3 each pitted calamata olives, chopped, equal to 2 tablespoons
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil

Directions

  • In a medium bowl, mix all ingredients.
  • Cover and refrigerate until chilled.

Nutritional Facts 1 serving equals 53 calories, 2 g fat (trace saturated fat), 87 mg sodium, 7 g carbohydrate, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.
