Antipasto Picnic Salad Recipe

Ingredients

  • 1 package (16 ounces) medium pasta shells
  • 2 jars (16 ounces each) giardiniera
  • 1 pound fresh broccoli florets
  • 1/2 pound cubed part-skim mozzarella cheese
  • 1/2 pound hard salami, cubed
  • 1/2 pound deli ham, cubed
  • 2 packages (3-1/2 ounces each) sliced pepperoni, halved
  • 1 large green pepper, cut into chunks
  • 1 can (6 ounces) pitted ripe olives, drained
  • DRESSING:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon coarsely ground pepper
  • 1/2 teaspoon salt

Directions

  • Cook pasta according to package directions. Meanwhile, drain giardiniera, reserving 3/4 cup liquid. In a large bowl, combine the giardiniera, broccoli, mozzarella, salami, ham, pepperoni, green pepper and olives. Drain pasta and rinse in cold water; stir into meat mixture.
  • For dressing, in a small bowl, whisk the oil, vinegar, lemon juice, Italian seasoning, pepper, salt and reserved giardiniera liquid. Pour over salad and toss to coat. Refrigerate until serving. Yield: 25 servings (1 cup each).

    Editor's Note: Giardiniera, a pickled vegetable mixture, is available in mild and hot varieties and can be found in the Italian or pickle section of your grocery store.

Nutritional Facts 1 serving (1 cup) equals 216 calories, 12 g fat (4 g saturated fat), 23 mg cholesterol, 527 mg sodium, 18 g carbohydrate, 1 g fiber, 10 g protein.

made this for a pot luck picnic where we were expecting about 100 peeps. Many of these ingrediants are not to my taste, (olives, giardiniera, green pepper) but I followed the recipe exactly. It was finished off completely (I tasted some pasta and ham) and i LOVED the dressing that several reviews have complained about.

This is absolutely out of this world and very close to a main dish. I made half the recipe and substituted 8 oz Kalamata olives for the ripe olives. For the dressing, I reserved 2 z of the giardiniera liquid, 2 oz of the Kalamata liquid and 6 oz Zesty Italian Dressing. The Kalamata olives and liquid gave it it that extra kick. I served it at a Senior Luncheon and everyone begged for the recipe. I use the HOT giardiniera when I make it for my family.

Delicious! I think this is the best pasta salad I've ever had. This was also the first time I tried giardiniera and I loved it. Also, like a lot of other people on here, I only made half of the recipe and it was more than enough.

Good salad. Nice, unexpected combination of ingredients. By way of clarification to mjill, the Italian use of the word 'anti' means "before" and "pasto" refers to the word "meal". Therefore, antipasto simply means "before the meal".

This is not Antipasto salad; anti means no, pasto means pasta; so "no pasta" - antipasto.

I made this for a big birthday party and got wonderful comments on it. It was simple to make and prepare and it did make a lot of salad, but that's why I picked it. They only thing I really didn't like about it was the dressing...I found it a little to vinegery for me. Next tiem I will just use regular Krafts Italian salad dressing on it.

Very good recipe and different. A refreshing change from the Italian Dressing pasta salad. Cut the recipe in half and it still made alot - but that's not a problem,

we'll empty the bowl!

Made this for the big annual 4th of July BBQ. Family tasted it, would not allow me to share with the guests! Thank goodness this makes a lot. I did bring about a 1/4 of it though... Truly is a fantastic recipe. Soooo EASY to assemble.

Made this for a Memorial Day picnic. Very good, but the serving size is rather large. That worked for my situation, but I would certainly half it if I weren't taking it to a gathering.

This was a great salad and my guests really enjoyed it. I substituted a 97% fat free ham steak for the deli ham, as I could cube it easily. I also found 97% fat free pepperoni to help cut the fat out on this. I couldn't find hard salami, but did substitute a Hickory Farms summer sausage that went over quite well. I also blanched the broccoli in the pasta as it cooked and drained it all into the colander. I have several requests for the recipe. The only down side of this recipe was that I didn’t have a bowl big enough to mix all the ingredients. Next time I'd easily cut everything in half as it made so much.
