Angel Hair Pasta with Chicken Recipe

Ingredients

  • 8 ounces uncooked angel hair pasta
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil, divided
  • 2 medium carrots, sliced diagonally
  • 1-1/2 cups fresh broccoli florets
  • 2 to 3 teaspoons minced garlic
  • 1-1/3 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried basil
  • 1/2 teaspoon salt
  • Additional grated Parmesan cheese

Directions

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until chicken is no longer pink; drain. Remove and keep warm.
  • In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender.
  • Drain pasta. Serve chicken mixture with pasta. Sprinkle with additional cheese. Yield: 4 servings.

Nutritional Facts 1 cup chicken mixture with 1 cup pasta (calculated without additional cheese) equals 463 calories, 13 g fat (4 g saturated fat), 73 mg cholesterol, 861 mg sodium, 48 g carbohydrate, 4 g fiber, 36 g protein.

Woops I meant to say I used parsley in place of the basil.

This was delicious. I made just a few changes because I did not have all the ingredients. I used thin slices of lean pork in place of the chicken and I used parsley in place of the chives. Everything else stood the same and my family loved it. Even my finicky 7 year old. Will definitely make this dish again. Maybe with a penne in place of angel hair pasta though.

My husband & I loved this. For the vegetables, I used asparagus, yellow pepper, chopped tomato, & pea pods, because that is what I had on hand. Very tasty

We enjoyed the dish; however, the basil ruined the dish. I've added shrimp, garlic cloves and shallots to complete its taste.

I was expecting a little more flavor, however the step-kids and fiance' really enjoyed this dish. The kids loved the noodles and the fiance' loved the flavor of the basil.

Very flavorful and easy. I used freshly grated Parmesan cheese and it clumped into quarter sized balls with flecks of basil as it simmered. Still tasted fine.

This is a quick recipe and a keeper. I put in zucchini instead of the broccoli. Next time I will add more vegetables to it.

I have made this recipe several times now. Not only quick but, light and fresh. I have used shrimp and vegetable broth which is very good too.
