Angel Food Cake Roll Recipe
  • Prep: 20 min. Bake: 15 min. + freezing
  • Yield: 10 Servings

Ingredients

  • 1 package (16 ounces) angel food cake mix
  • 5 teaspoons confectioners' sugar
  • 1 cup (8 ounces) strawberry yogurt
  • 1 package (1 ounce) instant sugar-free vanilla pudding mix
  • 3 drops red food coloring, optional
  • 2 cups reduced-fat whipped topping

Directions

  • Line a 15x10x1-in. baking pan with waxed paper. Prepare cake according to package directions.
  • Pour batter into prepared pan. Bake at 350° for 15-20 minutes or until cake springs back when lightly touched. Cool for 5 minutes.
  • Turn cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up jelly-roll style in the towel, starting with a short side. Cool on a wire rack.
  • In a large bowl, whisk the yogurt, pudding mix and food coloring if desired. Fold in whipped topping.
  • Unroll cake; spread filling evenly over cake to within 1/2 in. of edges. Roll up. Cover and freeze. Remove from freezer 30 minutes before slicing. Yield: 10 servings.

Nutritional Analysis: One slice equals 236 calories, 2 g fat (2 g saturated fat), 2 mg cholesterol, 464 mg sodium, 49 g carbohydrate, trace fiber, 5 g protein. Diabetic Exchange: 3 starch.

Made this for a small group....Nothing left to take home !! I tweeked a bit...used banana cream pudding, added some cut up bananas and strawberry bits to the yougurt mix, along with an extra 4 oz of strawberry yogurt. Absolutely delicious! One note: In the future, for presentation, I would cut a thin slice off each end, to make it look even prettier. Otherwise, the filling does not butt up to the end of the cake roll, due to the way the filling is spread.

The Angle foodRecipewe really enjoyed. It keeps so well frozen and whipped it out for evening guests and slices and looks so special on the plate. I agree s little stronger strawberry flavour would enhanse. Maybe just slice in a few fresh raw strawberrys with the yugurt.Weight watchers even approved the recipe.

I HAVE MADE THIS EXACT RECIPE FOR YEARS AND THERE IS NEVER ANY LEFT! I DO BEAT THE PUDDING, WHIPPED TOPPING AND YOGURT TOGETHER WHICH MAKES IS THICKER AND STAYS PUT WHEN YOU ROLL IT UP!!!

This recipe is wonderful. Served it to guests and all had great things to say. Its like eating Ice cream and cake together. I made mine with the strawberry yogurt and my sis in law hates yogurt, but she loved this cake roll. I will definatley be making this again.

Although I am not a diabetic personally, my mother is and I was looking for a dessert that I could serve at dinner that would be ok for her to eat. I must say that I absolutely loved the taste of this recipe and will be making it for myself and my daughter as well as for my mother!!!!

This tasted great. I looked up other roll cakes using angel food and they made two jelly roll pans for each box mix. One to eat, one for company or sharing. I made one strawberry and one blueberry but used white chocolate instant pudding - will be making this lots.

I made this for easter...what a hit! Everyone loved it. It's light and a great summer dessert.

I did change a few things. I added fresh sliced strawberries & if you want a goos strawberry pink color you need to add about 8 drops of red food color.

This is the most incredible dessert! It is very easy to make and the presentation is just beautiful! I sprinkled each slice with toasted sliced almonds, placed two fanned-out strawberries on each plate and dusted lightly with powdered sugar. We had a diabetic in our party and I was looking for something everyone could enjoy. It received raves! It does make too much cake batter for a 15 x 10 pan. I used an 18 x 13 pan and still had some batter left over. Be SURE not to overcook, as the wax paper will be more difficult to remove. I can't wait to make this again!!!

I prepared the cake mix according to directions, but found that when it baked, it oozed over the edges of cookie pan and was much to thick to roll properly. It completely cracked through at 3 different places.I managed to get it together, placed the filling in it and rolled it back up. It is in my freezer and I'm sure it will taste good, but am not sure I'd make it again. IF I do, I will use half of the angel food cake batter
