Anchovy and Tomato Bruschetta Recipe

Ingredients

  • 2 ounces anchovy fillets, rinsed and drained
  • 2 teaspoons capers, drained
  • 3 plum tomatoes, seeded and chopped
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped parsley
  • 1/4 cup grated Romano cheese
  • 6 slices Italian bread

Directions

  • Preheat broiler or toaster oven to 350°F.
  • Drain and pat anchovies dry with paper towel. Chop coarsely.
  • In small bowl, mix anchovies, capers, tomatoes, onion, parsley, and cheese.
  • Place bread on baking tray. Lightly toast in oven, turning once.
  • Spoon topping onto bread. Serve.
