Amaretto Cherries with Dumplings Recipe

Ingredients

  • 2 cans (14-1/2 ounces each) pitted tart cherries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 1/4 cup Amaretto
  • DUMPLINGS:
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon grated lemon peel
  • 1/8 teaspoon salt
  • 1/3 cup 2% milk
  • 3 tablespoons butter, melted
  • Vanilla ice cream, optional

Directions

  • Drain cherries, reserving 1/4 cup juice. Place cherries in a 3-qt. slow cooker.
  • In a small bowl, combine the sugar, cornstarch and salt. Stir in reserved juice until smooth. Add to slow cooker. Cover and cook on high for 7 hours. Drizzle amaretto over cherry mixture.
  • For dumplings, in a small bowl, combine the flour, sugar, baking powder, lemon peel and salt. Stir in milk and butter just until moistened. Drop by tablespoonfuls onto hot cherry mixture. Cover and cook for 45 minutes or until a toothpick inserted in a dumpling comes out clean. Serve warm with ice cream if desired. Yield: 5 servings.
