Almond Oatmeal Cutouts

Almond gives these cutout oatmeal cookies added flavor. The dough is slightly sticky, so roll out the dough between pieces of waxed flavor.

TIME: Prep/Total Time: 30 min.

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 2 teaspoons almond extract
  • 1-3/4 cups all-purpose flour
  • 1-1/4 cups old-fashioned oats

Directions:

In a large mixing bowl, cream the butter, shortening and sugar until light and fluffy. Beat in extract. Combine flour and oats; gradually add to the creamed mixture.
    Roll out between waxed paper to 1/4-in. thickness. Cut with 2-1/2-in. cookie cutters dipped in flour.
    Place 1 in. apart on ungreased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool. Yield: 2-1/2 dozen.
