Ingredients

  • 1 beef flank steak (1-1/2 pounds), cut into 1/2-inch cubes
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 5 medium carrots, thinly sliced
  • 4 cups shredded cabbage
  • 4 medium red potatoes, diced
  • 2 celery ribs, diced
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • 2 cans (14-1/2 ounces each) beef broth
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 tablespoon sugar
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried parsley flakes

Directions

  • In a large skillet, brown steak and onion in oil; drain. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low for 8-10 hours or until meat is tender. Yield: 8 servings.

Nutritional Facts 1-3/4 cups (prepared with reduced-sodium broth and reduced-sodium tomato soup) equals 279 calories, 9 g fat (3 g saturated fat), 37 mg cholesterol, 501 mg sodium, 31 g carbohydrate, 6 g fiber, 18 g protein. Diabetic Exchanges: 2 starch, 2 lean meat, 1 vegetable.

wonderful!! I did cut back to one can tomatoes, not big fan, and added some spices while cooking meat! Fixing again today, 4th time! thanks so much

I followed this recipe as written and had a Happy family. My 9 year old said it was the best soup/stew I'd ever made. Very happy to make this again soon.

I made some changes to this recipe the second time I made it, and it was better. I used Italian-herbed tomatoes, a bit more sugar, a little less Italian seasoning. Tonight I'm going to substitute Swiss chard for the cabbage to make it even heartier. I'm tempted to add kidney beans, but will probably do that next time. Nice, versatile recipe for a cold snowy day.

We really liked this soup. I was concerned that my kids would complain about the cabbage, but they didn't even notice it! I did all the prep the night before and just put it all in the crock pot in the morning. I'll probably add some corn and green beans next time.

Although I made changes to this soup I still give it 5 stars. It's so tasty and satisfying. I left out the beef and added 2 cans of navy beans. I also added some baby green beans and corn. Yummy and will be a great go-to soup all fall and winter.

I rated this 4 stars the first time I made it, but I changed a couple things and now I would give it 5 stars. I added more seasonings-fresh ground black pepper, Emeril's Essence, some red wine and worcestershire to the meat while browning, fresh minced garlic (about 4 cloves), a bay leaf and 1/2 teapoon chili powder. I used 3 cans (14 ounces each) of the beef broth and only 1 can (14 ounces) of the diced tomatoes. This was one of the best veggie beef soups I've had. Served it with grilled chesse sandwiches, husband and son loved it ..thanks!

Absolutely delicious! I put the veggies at the bottom of the slow cooker and meat on the top and the the diced tomatoes substituted with a can of tomato paste. Everybody loved it! Will definitely make it again.

The combination of ingredients was tasty, but it lacked flavor. I added 2 tsp. of chili powder, 1 tsp. salt & pepper and 1-2 cups of tomato juice (V-8).
