Sandwich Your Ice CreamHomemade ice cream sandwiches are an easy treat to make. Place 1/2 cup of any flavor ice cream on the flat side of a 3-in. cookie of your choice. Place another cookie, bottom side down, on top of the ice cream. Gently press cookies together until ice cream is even with the edges. If desired, roll edges of the sandwich in toppings (like miniature chocolate chips, chopped nuts and chocolate jimmies) until covered. Serve immediately or wrap in plastic wrap and freeze.

At 10 g carbs per sandwich, I would not consider this recipe to be "low carb".
