Our part of Pennsylvania is known as "Apple Country". This cake is one of my family's favorites. It's great for a lunch box treat.

  • Prep: 15 min. Bake: 1-1/2 hours + cooling

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 cups plus 5 tablespoons sugar, divided
  • 1 cup vegetable oil
  • 4 eggs
  • 1/3 cup orange juice
  • 1/2 teaspoon salt
  • 2-1/2 teaspoons vanilla extract
  • 4 medium baking apples, peeled and thinly sliced
  • 2 teaspoons ground cinnamon
  • Confectioners' sugar, optional

Directions

  • In a large bowl, combine the flour, baking powder, 2 cups of the sugar, oil, eggs, orange juice, salt and vanilla. Beat until thoroughly combined. In another bowl, toss apples with cinnamon and remaining sugar. Spread one-third of batter in a greased 10-in. tube pan. Cover with half of the apples. Repeat layers. Spoon remaining batter over top.
  • Bake at 350° for 1-1/2 hours or until a toothpick inserted near the center comes out clean. Cool for 20 minutes before removing from pan to a wire rack to cool completely. Just before serving, dust with confectioners' sugar if desired. Yield: 12-16 servings.

Nutrition Facts: 1 serving (1 slice) equals 356 calories, 15 g fat (2 g saturated fat), 53 mg cholesterol, 165 mg sodium, 52 g carbohydrate, 1 g fiber, 4 g protein.

this a a very tasty cake and easy to make its my husbands favorite right now . he says he likes it even better if you would warm it up in the microwave and top it off with whipping cream. me , I like it either way

I made this cake for a church fellowship....it was delicious!! And gone quickly! It has a moist, dense texture and wonderful apple flavor. My changes were 1tsp. nutmeg to replace 1tsp. cinnamon.  And I added an icing glaze to the top. Thanks for a wonderful recipe!  Yes
