Dear Peggy: I prefer the taste of fresh baby spinach to full-grown. Does baby spinach have all the same health benefits? —S.B., Granby, Massachusetts

There are three common types of spinach—flat, savoy and semi-savoy. As the name implies, flat-leaf spinach has smooth leaves. Savoy spinach has curly leaves, and semi-savoy has slightly curly leaves. Baby spinach comes from the smallest leaves of the flat-leaf variety and has all the health benefits of large-leaf spinach. At only 7 calories per cup, it packs a healthy dose of vitamins A and C plus folate, iron and calcium.
