DEAR PEGGY: I am a regular subscriber to Healthy Cooking and need some advice as to how long I can freeze baked goods. I am going to be baking a lot of squares, cookies, etc., for our daughter's wedding this year and would like to do as much as possible ahead of time. Can you tell me how long baked goods can be kept in the freezer and what would be the best way to store them? Also, is it possible to freeze sandwiches ahead of time? Most cookies can be stored in the freezer for up to 3 months. Wrap unfrosted cookies in plastic wrap, stack in an airtight container, seal and freeze. Thaw cookies at room temperature before frosting. If your crisp cookies became soft during storage, crisp them up by heating in a 300 degree oven for 5 minutes.
I would not recommend freezing sandwiches ahead of time.
