Skinless Salmon

Peeling the skin from fresh salmon can be difficult, but not with my method. I bring 1/2 inch of water to a slow boil in a frying pan. I put the salmon, skin side down, in the water for a minute. I carefully remove the salmon from the water, and the skin peels right off. I gently rinse the fish and proceed with the recipe. —Freda Cohen, Los Angeles, California
