Microwave Chicken

When recipes call for cooked chicken, I use an easy microwave method instead of cooking the chicken on the stove. I simply place a pound of skinless boneless chicken breasts around the sides of an 8-inch square glass dish. I pour about 1/2 cup white wine or water over top, sprinkle with white pepper and cover with vented plastic wrap. I cook on medium-high (70% power) for about 7-10 minutes or until the juice from the chicken is no longer pink. (You may have to adjust the time depending on the wattage of your microwave.) Then I let it stand covered for 3 minutes. When it’s cool enough to handle, I chop it coarsely and use in any recipe calling for cooked chicken. —Jerra Foster, Houston, Texas
