Leftover Potatoes

I don’t like to peel and cook potatoes, so when I do, I make extras to save time later. When the potatoes cool, I slice or dice the leftovers, place them in resealable plastic bags and refrigerate them until needed for frying, creaming or adding to soups. —Ethel Gibbon, Allentown, Pennsylvania
