Juice Concentrate for One

On occasion, my husband and I enjoy a glass of fruit juice made from concentrate, but I don’t like to stir up an entire pitcher that we might not drink. To avoid this, I place paper liners or paper nut cups in a mini muffin tin and divide a 12-ounce can of concentrate among the liners, spooning 1 ounce into each. Once frozen, the individual amounts of concentrate are packed into a resealable freezer storage bag. The small portions allow us to make a little juice at a time—I just add 3 ounces of water to each portion to make 4 ounces of juice. This is also handy when a recipe calls for just a few tablespoons of juice or frozen juice concentrate. —Barbara Akers, Cedar Rapids, Iowa
