“I place a slice of leftover meat loaf between two cheese slices and two slices of bread. Then I coat both sides of the sandwich with butter spray and fry in a pan until golden brown,” writes Catherine White of Lafayette, Louisiana. “For a Mexican flavor, I sometimes add chili or taco seasoning to the meat loaf mix.”
