Testing Burgers for Doneness
Cook beef, pork and lamb burgers to 160°; cook chicken or turkey burgers to 165°. To test for doneness, use tongs to hold burger while inserting instant-read thermometer horizontally from a side. Make sure thermometer is far enough in to read the temperature in the center.
