Making a Quick Bread with a Stirred Batter
When a quick bread is made with liquid fat (melted butter or oil) the fate, eggs and any liquid are first combined, then stirred into the dry ingredients.
In a large bowl, combine dry ingredients to evenly distribute the baking powder or soda. Make a well in the center.
Beat eggs and combine with any liquid ingredients.
Pour egg mixture into the well all at one time.
Stir the ingredients together just until moistened, leaving a few lumps. Overmixing will result in a tough baked product.
Fold in any other ingredients. Bake as directed.
