Cover a smooth dry work surface with a piece of plastic wrap that is larger than the phyllo sheets. Place first sheet of phyllo on the plastic wrap. Working quickly, layer the phyllo sheets over each other, brushing with butter between each sheet and sprinkling with cracker crumbs.
Carefully spread filling to within 1 in. of edges.
Fold one long side over the filling, then the two short sides. Using the plastic wrap to help lift the remaining long side, roll up jelly-roll style.
Use the plastic wrap to help transfer strudel to greased baking sheet. Roll strudel off of plastic wrap and center on baking sheet. Discard plastic wrap.
