Double Chocolate Curls
White chocolate spirals add interest to the large chocolate curls that decorate Chocolate Mousse Cheesecake (pictured at far right). Here’s how to make them.
Spread a thin layer of melted dark chocolate candy coating on a baking sheet. Immediately drag a fork through the chocolate on a diagonal. Let stand until set.
Carefully spread melted white candy coating over the dark
candy coating, filling the gaps in the chocolate. Let stand until set.
Holding a dough scraper or sturdy metal spatula at a 45° angle; scrape over the top of chocolate, being careful not to press too hard. The strips will curl as they come away.
