Apple Pie Spice: 1/2 teaspoon ground cinnamon + 1/4 teaspoon ground nutmeg + 1/8 teaspoon ground cardamom + 1/8 teaspoon ground allspice. Mace: 1 teaspoon ground nutmeg. Pumpkin Pie Spice: 1/2 teaspoon ground cinnamon + 1/4 teaspoon ground ginger + 1/8 teaspoon ground nutmeg + 1/8 teaspoon ground cloves or allspice.
