Croquettes
When I make croquettes, I cook just the amount I need. I put any leftover mixture into cupcake liners and freeze them. Once they’re frozen, I remove them from the liners, place them in freezer bags and store for future use. —Laura Bosley, Lebanon, New Hampshire
