Oatmeal Bread

When I make oatmeal bread, the risen dough in the pan looks like it would yield a nice-size loaf. But after it bakes, it seems smaller. I wait until the dough won't rise anymore before I bake it…so what am I doing wrong? —L.V., Nashua, Iowa

It sounds like your dough may have over-risen in the pan. Dough should only rise until doubled in size. This usually takes 45-60 minutes for white bread, a little longer for heavier breads like whole wheat and rye. To test the dough to determine if it has risen enough, gently press the side with a fingertip. If the indentation remains in the dough, then it’s time to bake the bread.
