How many packages of dry yeast equal one package of fresh cake yeast? I prefer to use fresh, but it is not always available. —M.W., Naperville, Illinois
Yeast can be purchased in three ways—in individual packages, in bulk or in cake form. Each 1/4-ounce package of active dry yeast is equal to 2-1/4 teaspoons of bulk yeast or one fresh cake yeast (.6 ounce).
