Broth Substitute
My husband is allergic to shellfish, dry beans and chicken, so he has to be very careful about what he eats. Because so many recipes call for chicken broth, I'm wondering if you can suggest a substitute. —P.G., Lakeland, Florida
Try vegetable broth instead. It should work fine for you most of the time. It can be substituted for chicken broth in nearly all recipes with only a minor change in flavor.
While most vegetable broths are, indeed, vegetarian, do read the label or contact the manufacturer to make sure no chicken was added to the broth during processing.
